Grits recipes?
I've noticed some fans of grits here in this section. I have never had grits, and all I know about them are what the directions on the box says, and "my cousisn vinny."
Any one have any suggestions? What kind to get, how to perpare, ect? Oatmeal is getting boring. Thanks. |

We don't use instant grits, so I use a little dip size slow cooker that I also use for oatmeal. About twice as much water as grits plus salt to taste. In a slow cooker 2 to 4 hours (cookers vary, experiment... they should be soft and fluffy, all water absorbed, and not scorched) and no peeking because that lets the steam out.
We love them buttered as a starch side dish, but you can put them under beans to balance protein the same way rice does, and some people like gravy on them, as with other starch side dishes like mashed potatoes. A delicious, but not so healthy dish from any leftovers is to make patties about like a hamburger and fry them till light brown in a little oil. (the light brown does not have to be even - hand shaping does not make perfect flatness) Tender inside, crunchy outside. You can make those from corn meal too. We try not to indulge too often because we limit fried food, but it is a much better version of hush puppies. They are great as the skillet bread with a meal of beans (tastier and easier to make than tortillas). Grits are very Southern. But once you love them, you love them. |

I like quick grits cooked as a cereal. 3 tablespoons grits to a bowl of water and dash of salt. Add some margarine, and sugar or syrup to the bowl for cereal. Leftovers can be fried and topped with syrup. Too bad nobody else in my family likes them.

Quick Nassau grits -- add Rotel tomatoes, green onions, crumbled bacon, shredded cheddar, and a dash a Louisiana hot sauce.
It'll make you throw rocks at the Quaker Oat guy. |

I just use salt, butter, and pepper myself.

Grits are ground hominy (kernal about twice the size of a kernal of corn)
I'm and instant grits type, water, spoon of brown suger. Dried grits would make a hell of a cement - clean your bowls immediately after, or scrub forever more.... |

I tend to make mine in large batches and instead of water added work with chicken or fish broth and add hunks of chicken, pork, shrimp, fish. etc. Little ancho chilli powder, tumuric cilantro salt /pepper. talkin Dinner that sticks to ya ribs

I love quick grits as a hot breakfast cereal.Just a dab of butter and real maple syrup.Its fast, basic and keeps you full for a long time without putting you back to sleep.:wink:
